Smoked Chicken Biryani
Ingredients
Chicken 1/2 kg (washed / cleaned, cut into pieces)
Rice basmati 1/2 kg (soaked for 15 minutes)
Tomatoes 2-3 (quartered)
Onion 1 (medium, finely sliced)
Mint 1 bunch (finely chopped)
Green chilies 6 (whole)
Ginger, garlic paste 1½ tbsp
Dried plums 8-10 (soaked in hot water)
Red chili powdered 2 tbsp
White cumin ½ tsp
Lemon juice 3-4 tbsp
Garam masala 1 tsp (grinded)
Yellow food colour ¼ tsp
Salt to taste
Yogurt 1 cup
Hot milk 4 tbsp
Ghee/oil 1 cup
A piece of coal.
Cooking Directions
Then cook with out using water.
When chicken tender, heat a coal on fire and place it on a dry piece of bread over cooked chicken; drop some oil on coal and cover pan to give smoke in chicken.
Boil rice adding salt and 1tbsp lemon juice.
In another pan add 1 cup oil, fry onion and take half out, in the same oil add tomatoes, plums, green chilies, salt, mint and 1 tbsp red chili powder.
Cook on low flame when masala mix well, add chicken in it.
Greasing a skillet add rice then a layer of chicken then rice, sprinkle brown onion ,and yellow color dissolve in milk.
Simmer it for 10 minutes and serve with aloo raita.
Note: I use to give smoke after dam as well just to give dagi flavor and aroma, try it you will love it.
