Roasted Chicken with Rice, Roasted Potatoes and Tomatoes (Dejaj Roze Batatas)
Ingredients
For Roasted Chicken:
Chicken ½ kg
Garlic paste 1 tbsp
Yogurt 2 tbsp
Nutmeg ¼ tsp
Saffron a pinch
Squeezed 1 lemon
Oil 1 tsp
Salt n black pepper to taste
For Rice:
Basmati rice ½ kg
Salt 1 tsp
Whole black pepper ¼ tsp
Cloves 2 to 3
Cinnamon stick 1
Black cardamom 1
White cumin ¼ tsp
Oil 2 tbsp
Few drops of saffron color
Onion ½ (finely chopped)
Garlic ½ tsp
For Roasted Potatoes and Tomatoes:
Potatoes 2
Tomatoes 2
Salt a pinch
Black pepper a pinch
Garlic paste ½ tsp
Oil 1 tsp
Cooking Directions
Add garlic paste, yogurt, squeezed lemon, nutmeg, oil and saffron to chicken and marinate for 45 minutes.
Soak basmati rice for half an hour.
Now roast marinated chicken for half an hour at 200 degrees.
Peel and chop potatoes and tomatoes, add garlic paste, 1 tsp oil, salt and black pepper.
Place the tomatoes and potatoes with chicken in the oven to roast.
In a medium sized cooking pot, heat 2 tbsp oil.
Add finely chopped onion, garlic paste, whole black pepper, cloves, cinnamon sticks, black cardamom and white cumin and stir for a couple of minutes.
Now add soaked rice, salt n black pepper and water as required.
When water comes to a boil, cover the lid and let it cook until water dries up.
