Potato Curry









Ingredients

Potatoes 450 g (1 lb)
Cooking oil ½ cup
Onion 3 tbsp (sliced)
Bay leaf 1
Cumin ½ tsp (seeds)
Turmeric ½ tsp (ground)
Chilli powder ½ tsp
Ginger Ground ½ tsp
Coriander 1 tsp (ground)
Cumin roasted ½ tsp (powder)
Dry red chilli roasted ¼ tsp (powder)
Cardamoms 2
Cinnamon sticks 2
Sugar 1 - 2 tbsp
Puree tamarind 1 - 2 tbsp
Water 2-3 cup
Salt to taste



Cooking Directions

Boil the potatoes, peel it off and cut into small cubes.

Heat oil in a pan.

Add cumin seeds, bay leaf and onion, stir fry the onion brown.

Then add turmeric, ginger, coriander, cardamom, cinnamon and red chili powder, saute it.

When oil separates, add potatoes, salt, sugar and tamarind.

Add 2-3 cups of water and simmer till gravy get thick.

Then in other pan, roast dry red chili and cumin.

Then transfer the potato into a serving bowl, sprinkle with the roasted cumin and dry red chili.

Serve with naan or paratha.
