Baingan ka Bhurta (Eggplant Curry)









Ingredients

Eggplant 2 - 4 medium
Yogurt 1 cup
Garlic 1 tbsp (chopped)
Crushed red chili 1/2 tsp
Roasted cumin powder 1 tsp
Green chilies 2
Lemon juice 2 tbsp
Onions 1 (chopped)
Salt to taste
Oil 2 tbsp
Coal 1





Cooking Directions

Wrap egg plant with aluminum foil and bake in oven for 10 minutes, till it tenders.

Allow the eggplant to cool, peel and mash.

Heat oil in a skillet fry onion, then add garlic, saute for few minutes.

Add mashed eggplant, crushed red chili, cumin and salt.

Mix well and cook for 5 minutes.

Add lemon juice, green chilies and chopped coriander. Put everything in yogurt.

The baingan ka bhurta is ready to serve.

Note: Egg plant can also be roasted over direct flame of gas burner.
