Buhkari Rice (Arabian Rice)






Ingredients

Rice 3, 1/2 cup
Chicken/mutton 1, 1/2 kg
Garlic with skin 1 clove
Boiled chickpea 1 cup
Black currants 1/3 cup
Raisin 1/3 cup
Mixed nuts 1/2 cup
Butter 1 tbsp
Ginger paste 1 tbsp
Garlic paste 1, 1/2 tbsp
Turmeric 1/4 tsp
Whole all spice a handful
Black pepper crushed 1 tsp
Food color (yellow) a few drops
Tomato 1 chopped
Onion 1 sliced
Jaggery (Gur) 2 tbsp
Salt 1, 1/2 tsp
Ghee as required




Cooking Directions

Sprinkle salt on the meat and leave for a while.

Boil rice till half done.

Add 1 clove of garlic with skin and 1/2 tsp roughly chopped garlic while boiling rice.

In a bowl combine ginger and 1 tbsp garlic, whole all spice, salt, turmeric and tomato.

In 1/4 cup ghee, golden brown sliced onion.

When onion starts browning, add mixed spiced and tomatoes.

Add chicken, water and mix well.

Cook on medium heat.

Add water if gravy is sticking to the pan.

When chicken is ready, add half boiled rice to it, chickpeas and food color.

Fry all the dry fruits in butter in a frying pan.

Pour it over rice, along with jaggery.

Cover and cook on very low flame till rice is completely done.

When ready dish out, serve hot and enjoy.
